Sencha is made from the younger shoots of the Camellia Sinensis plant. It is first steamed to stop oxidisation during processing before the rolling, shaping and drying process.
Sencha is the most common Japanese green tea yielding a greenish-golden brew with a great balance between astringency and sweetness.
